Homemade French Toast

Homemade French Toast


Ingredients:

3 eggs
1 tsp Cinnamon
1/4 Cup sugar
1 tsp vanilla
2/3 Cup Milk
Bread


Place your eggs in a shallow bowl and mix them up then add cinnamon, sugar, vanilla, and milk in the bowl and mix well.  Then get some bread and cut it in 3 strips and dip in the mixture and place on your pan or griddle and cook until golden brown on both sides and then they are ready to eat.



Pancakes from Scratch

Ingredients:

2 1/2 Cups Self Rising Flour
1 egg
2/3 Cup Sugar
1/2 Cup Vegetable Oil
1/4 Cup Milk
Water


Place the flour, egg, sugar, oil, milk in a bowl and add water as desired for how you want your pancakes to be.  Add a lot of water if you want them to be runny and less water if you want them to be kind of firm.

Then you are ready to place on a pan or griddle and cook until the top side is full of holes from them cooking, then flip and use turner and flatten them out and then put butter on the top and pull them off and place them on a plate and you can eat them.




NOTE:  You want them kind of runny but not real runny.  If it is real runny them they don't turn out and you can't do anything with them.

Apple Dip

Ingredients:

1 (8 ounce) package cream cheese
1/2 Cup brown sugar
1 Tbsp. vanilla


Stir together the cream cheese, brown sugar, and vanilla until the sugar has dissolved, and the mixture is smooth.
Place in refrigerator  for 30 min - 1 hr. until chilled then it is ready to eat.


You can also add strawberry- flavoring cream cheese or whatever flavor you want to add.

Homemade Biscuits

Ingredients:

21/2 Cups Self Rising Flour
3/4 Cup Butter
1/2 Cup Milk
Water
Wax Paper/ Extra Flour


Put flour into a bowl then put your butter in and use a fork and mend your butter into your flour until it looks like course crumbs.  Then add your milk and then add water to fully mix the mixture.  Put down your wax paper then put you some flour on there and a little bit of mixture then roll out your biscuits and put on a pan and put a little bit of butter on them and put them in the oven and bake until golden brown.

Preheat oven to 350 degrees



NOTE:  You can also replace the milk with Buttermilk as well if you don't want to use milk.

Homemade Icing

Ingredients:

4 Cups  Shortening
1/4 tsp. Vanilla
1/4 Cup  Milk
Confectionery Sugar


You put your shortening in a bowl with the vanilla, add your milk then add confectionery sugar until kind of firm but, spreadable.  If it gets to firm just add more shortening to it.  Once you have it to the desired firmness then spread on your cake or cupcakes.



NOTE:  You don't want it to firm and you don't want it kind of runny.

Peanut Butter Pin Wheels

Peanut Butter Pin Wheels



Ingredients:

1 jar Peanut Butter
1 Potato
1 bag Confectionery Sugar
1/4 tsp. Vanilla
Wax paper

You take and peel a potato and put it in some water (DON'T ADD SALT) and you let it cook until soft.  When it is cooked you drain it and take a fork and smash it then you add your vanilla in and then add confectionery sugar until it is hard to mix.  Then you take and spread out a piece of wax paper and you sprinkle it with confectionery sugar and then you put your fix on there and roll it out to however thick you want it and you spread peanut butter to your desired thickness and roll it up and when you are finished rolling it put it in the refrigerator for 30 min - 1 hr until chilled. Pull it out and cut with a knife and place on a plate and your ready to go.

NOTE:  It is best if you use the wax paper as a guide as you roll it, it will make it a lot easier to roll.

Banana Bread

Banana Bread


Ingredients:
    2 1/4 Cup sugar
    4 eggs
    1 1/2 cup cooking oil
    3 Cups Flour
    6 Tbsp Buttermilk
    1 1/2 cups mashed bananas
    1 Cup nuts of your choice ( Optional)


Pre-heat oven to 350 degrees.  Grease pans (8 /1/2 x 4 1/2 x 2 1/2) loaf pans.  Combine all ingredients except nuts in  a large mixing bowl or mixer.  Blend until smooth.  Stir in nuts.  Pour into prepared pans and bake at above temperature for about 1 hour or until golden brown.  Use tooth pick to test to see if it is done.


NOTE:  You can also use different kinds of pans if you prefer it depends on you.
Zucchini Bread



Ingredients:
   3 eggs
   2 cups of sugar
   1 Cup cooking oil
   1 Tbsp Vanilla
   2 Cups of course grated zucchini
   2 cups self-rising flour
   1 Tbsp Cinnamon
   1 Cup Walnuts  (Optional)


Beat eggs until fluffy.  Mix together ingredients, except nuts; until
 thoroughly mixed.  Mix in the nuts.  Pour into well greased pans 
(8 1/2 x 4 1/2 x 2/12 loaf pan)
Pre-heat oven to 350 degrees.

Place pans into oven and bake for about 1 hour or until  golden brown. 
 Make (2) loafs.


Alternate:  Add 2 Tbsp cocoa to above mixture for Chocolate zucchini bread.


NOTE:  You can use smaller pans if you want or you can use larger pans if 
you want it is your preference to which kind of a pan you want to use.   I have
 some shape pans that I use.
P-P Balls Candy

Ingredients:
    2 Cups confectioner Sugar
    1 Cup Peanut Butter
    1 Stick of butter
    1 Tbsp Vanilla
    1/4 bar Paraffin Wax
    6 oz. Chocolate Chips
    Tooth picks


Mix together the sugar, peanut butter, and vanilla.  Roll into 
balls and refrigerate for 15 minutes.

Melt the paraffin on low heat until liquid. Pour chocolate chips and 
stir thoroughly.  Keep heat at simmer for coating of peanut butter balls. 
 Use a tooth pick and place into the peanut butterballs.  Dip the ball into the chocolate wax mixture and place on wax paper to cool.  The thicker chocolate coating, re-dip cooled PP balls.

NOTE:  They make a chocolate that already has the paraffin wax in it at 
Wal-Mart that you can get and use so you don't have to do all of the work.  
All you have to do is just put in a pan and heat you can even do it in the
 microwave.

Pumpkin Roll

Ingredients:                     Filling Mix:
  
   (3) Eggs                                                 8 oz. Cream Cheese
   2/3 Cup Pumpkin                                     3 Tbsp. Butter
   2/3 Cup Sugar                                        2/3 Cup Sugar
   3/4 Cup of Flour                                      1 Tsp. Vanilla
   1 Tsp. Cinnamon
   Cookie Sheet Pan
   Wax Paper
    Powder Sugar


Mix Ingredients and pour into floured cookie sheet.  Bake at 350 Degrees
for 15 min.

Mix ingredients for filling during baking.

Turn out and roll on powder sugared wax paper cut to size of cookie sheet.

Spread filling onto baked pumpkin, roll up and refrigerate.


NOTE:   I only made this one time and it turned pretty good.

Chocolate Drop Cookies


Ingredients:

   4 cups sugar
   1 cup of milk
   1/2 cup of cocoa
   1 tbsp of vanilla
   1 cup of peanut butter
   5 cups of quick cook oats
   1/2 stick of butter


Mix milk, butter, sugar and cocoa in a large sauce pan.  Bring to a boil for 2-1/2 minutes.

Mix oats, peanut butter and vanilla in a medium mixing bowl during cook time.  Cut sheets of wax paper and lay on flat surface.

Remove boiled mixture from heat and mix in oat mixture.  Stir thoroughly.  Drop cookies onto wax paper with large spoon.

Let cool for 15 to 20 minutes.

NOTE:  If they do not get hard after 15 minutes you can spoon them back up and put them in the cooker  and bring to a boil for about 2 minutes and spoon them back out and they will then get hard.

Fancy Fudge ( Microwavable)




Ingredients:
    
      3 cups sugar
      (1) 7 oz jar marshmallow creme
      3/4 cup margarine
      (1) cup chopped nuts (optional)
      (1) 5 oz can evaportated milk
      (1) tsp. vanilla
      (1) 12 oz package chocolate chips ( see optional peanut butter below)


Microwave:  Melt margarine in a 4 quart bowl for 1 minute
on high setting.  Mix in milk and sugar until thoroughly mixed.
TIP:  Do not allow too much cooling in between cooking times. 
May cause grainy texture in fudge.

Microwave as follows:

  •   3 minutes on high and then removed and stir thoroughly.
           Be sure to scrap the sides.

           Add remaining ingredients

Stir in chocolate chips, marshmallow creme and vanilla until thoroughly mixed.

Pour into 13" x 9" pan that has been lightly coated with butter on sides and bottom.
Smaller pan may be used for thicker fudge, cooling time will be extended.

Makes approximately 3 lbs.

Peanut butter fudge:  substitute (1) cup of peanut butter for chocolate chips.

TIP:  When your done with the 3 minutes if your going to make peanut butter you will need to cook it an extra 3 minutes for it to come out real good.

Reshonda's Kitchen

Hello my name is Reshonda, I like to cook especially on holidays when you can cook all kinds of goodies.  I will share a few of them with you.  These are a few of my favorite recipes that
 I use during the holidays. You can try them if you would like, I will be sharing them with you.
This recipe is great for gifts at Christmas, put in a jar and the top of the jar decorate it with some sort of design.


Hard Candy
   
      Ingredients:
         2/3 cup corn syrup
         2 cups sugar
         1 Cup water

Stir mixture thoroughly

Boil to 290 degrees without stirring.
Remove from heat and add flavoring of choice.

Pour into lightly buttered pan.  As mixture begins to cool,
cut out into squares and place pieces into bowl of powered sugar.

Use Popsicle sticks and place into candy prior to hardening for suckers.
Place into powered sugar.

NOTE:  I always use the non-stick aluminum foil instead of the butter it works
 just as well.  I don't cut mine into squares I let it get a little hard and use
a butter knife and hit it with the end of it and it just breaks into a lot of pieces
then I just dump it into the powered sugar.
